Gluten-Free Dairy-Free Apple Cake

Ingredients

- 4 eggs
- 1 1/2 cups sugar
- Vanilla
- ½ cup vegetable oil (I use canola)
- 1 tsp Bicarbonate of soda
- 1 tsp baking powder

- 1 tsp cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 2 tbsp.Rum (optional)
- 1 cup chopped walnuts (optional)
- ½ cup raisins
- 3 big apples grated (preferably Granny Smith)



Method
  1. Beat the eggs with sugar and vanilla with an electric beater for 3-4 minutes until fluffy and pale in color.
  2. Add the oil and beat for one minute.
  3. Mix the dry ingredients together (flour, baking powder, bicarbonate, salt, cinnamon, and nutmeg) and add to the egg mix.
  4. Fold the dry ingredients in gently, and then add the raisins, the nuts, and the grated apples.
  5. Pour the mixture in a Bundt cake pan and put it in a pre-heated oven on 180°C.
  6. Bake the cake for 55 minutes. Take the cake out and let it cool.
  7. Turn into the serving plate and brush it with some warm apple jam as a glaze.
