Ingredients
- 4 eggs
- 1 1/2 cups sugar
- Vanilla
- ½ cup vegetable oil (I use canola)
- 1 tsp Bicarbonate of soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 2 tbsp.Rum (optional)
- 2 cups gluten-free cake flourmix
- 1 cup chopped walnuts (optional)
- ½ cup raisins
- 3 big apples grated (preferably
Granny Smith)
Method
- Beat the eggs with sugar and vanilla with an electric beater for 3-4 minutes until fluffy and pale in color.
- Add the oil and beat for one minute.
- Mix the dry ingredients together (flour, baking powder, bicarbonate, salt, cinnamon, and nutmeg) and add to the egg mix.
- Fold the dry ingredients in gently, and then add the raisins, the nuts, and the grated apples.
- Pour the mixture in a Bundt cake pan and put it in a pre-heated oven on 180°C.
- Bake the cake for 55 minutes. Take the cake out and let it cool.
- Turn into the serving plate and brush it with some warm apple jam as a glaze.
