Gluten-Free Homemade Tomato Sauce

You always wonder if the store-bought tomato sauce is gluten-free. You start reading ingredients off the jar, and you wonder about the emulsifiers??!! Not all sauces state whether they are gluten-free or not. Why to wonder and get confused? Why not make your own and rest assured that it is gluten-free and delicious! This sauce is so versatile. You can use it as a pizza topping or add it to cooked minced meat to get a Bolognese sauce.  It will keep in the fridge for a week and in the freezer for 6 months.

Ingredients

- 1 onion
- 2 cloves of garlic
- 3 tbsp. vegetable oil (preferably canola oil)
- 2 sticks celery
- 1 kg red tomatoes, diced
- 1 tsp salt
- 1 tsp sugar
- Freshly ground black pepper
- 1 tsp thyme
- 1 tsp Herbes de Provence (mix of herbs as oregano, rosemary, marjoram...)


Method

  1. Dice the onion and the celery. Crush the garlic. Put the oil in a saucepan and add the onion and the celery.
  2. Add 1/2 tsp of salt and keep stirring on medium heat until translucent and soft.
  3. Add the garlic and mix. Add the diced tomatoes (no need to peel), the remaining salt, sugar, black pepper, and the herbs.
  4. Let the sauce simmer on low heat for 20 minutes. Put off the stove and let it cool. You can use the sauce as is, or use a handheld blender to mash it. Keep it in a jar or an airtight container in the fridge until needed.
