You always wonder if the
store-bought tomato sauce is gluten-free. You start reading ingredients off the
jar, and you wonder about the emulsifiers??!! Not all sauces state whether they
are gluten-free or not. Why to wonder and get confused? Why not make your own
and rest assured that it is gluten-free and delicious! This sauce is so
versatile. You can use it as a pizza topping or add it to cooked minced meat to
get a Bolognese sauce. It will keep in
the fridge for a week and in the freezer for 6 months.
Ingredients
- 1 onion
- 2 cloves of garlic
- 3 tbsp. vegetable oil
(preferably canola oil)
- 2 sticks celery
- 1 kg red tomatoes, diced
- 1 tsp salt
- 1 tsp sugar
- Freshly ground black
pepper
- 1 tsp thyme
- 1 tsp Herbes de Provence
(mix of herbs as oregano, rosemary, marjoram...)
Method
- Dice the onion and the celery. Crush the garlic. Put the oil in a saucepan and add the onion and the celery.
- Add 1/2 tsp of salt and keep stirring on medium heat until translucent and soft.
- Add the garlic and mix. Add the diced tomatoes (no need to peel), the remaining salt, sugar, black pepper, and the herbs.
- Let the sauce simmer on low heat for 20 minutes. Put off the stove and let it cool. You can use the sauce as is, or use a handheld blender to mash it. Keep it in a jar or an airtight container in the fridge until needed.
