Ingredients
- ½ portion of basic cooked quinoa cold
- 3-4 green onions, finely
chopped
- 2 carrots, grated
- ½ cup chopped coriander
(cilantro)
- 2 tbsp chopped parsley
- 3 eggs
- ¼ tsp salt
- Freshly ground black
pepper
- 2 tbsp vegetable or
olive oil (to pan fry the quinoa fritters)
Method
- Put all the ingredients together and mix well.
- Keep it in the fridge for 30 minutes.
- Prepare a wide and shallow frying pan.
- Put the oil in the pan on the heat and add tablespoonfuls of the quinoa mix.
- Cook on one side for 2-3 minutes, then flip and cook on the other side.
- Add a little bit of oil, if needed.
Yields: 10-12 fritters
Almond Aioli Sauce
Ingredients
- ¼ cup almonds soaked in
cold water for 30 minutes
- 1 tbsp Dijon mustard
- 1 clove of garlic
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2-3 tbsp cold water
- Salt and pepper
Method
Put all ingredients in the
blender and whiz until you get a creamy sauce.
