Gluten-Free Quinoa Fritters with Almond Aioli Sauce


Ingredients
- ½ portion of basic cooked quinoa cold
- 3-4 green onions, finely chopped
- 2 carrots, grated
- ½ cup chopped coriander (cilantro)
- 2 tbsp chopped parsley
- 3 eggs
- ¼ tsp salt
- Freshly ground black pepper
- 2 tbsp vegetable or olive oil (to pan fry the quinoa fritters)








Method
  1. Put all the ingredients together and mix well.
  2. Keep it in the fridge for 30 minutes.
  3. Prepare a wide and shallow frying pan.
  4. Put the oil in the pan on the heat and add tablespoonfuls of the quinoa mix.
  5. Cook on one side for 2-3 minutes, then flip and cook on the other side.
  6. Add a little bit of oil, if needed.

Yields: 10-12 fritters

Almond Aioli Sauce
Ingredients

- ¼ cup almonds soaked in cold water for 30 minutes
- 1 tbsp Dijon mustard
- 1 clove of garlic
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2-3 tbsp cold water
- Salt and pepper

Method
Put all ingredients in the blender and whiz until you get a creamy sauce.
