Making
muffins is very easy. It does not require any electrical mixers, so it is quick
to prepare. I will share with you some gluten-free muffin recipes, and today we
will start with orange poppy seeds muffins. As I had some leftovers of the
candied oranges that were not dipped in chocolate, I used them in this recipe
and they turned out delicious! Your kids will love these muffins.
Ingredients
- ¾
cup milk (I used soymilk for a dairy free option)
- 1
tbsp. poppy seeds

2 ½ cups gluten-free all-purpose flour mix
- ¾
cup sugar (or 1 cup if you like it very sweet)

1/3 cup coconut oil
-
2 eggs, lightly whisked
-
2 tsp orange zest
- ½
cup fresh orange juice
-
1 ½ tsp baking powder
- ½
tsp bicarbonate of soda

10 pieces candied oranges (optional)
Method
- Pre-heat oven to 190°C.
- Soak the poppy seeds in the milk for few minutes.
- Meanwhile, mix all the dry ingredients (flour, sugar, baking powder, and baking soda)
- Mix all the wet ingredients (eggs, orange juice, orange zest, oil, and the milk with poppy seeds)
- Fold wet ingredients into dry ingredients and mix gently with a spatula or a wooden spoon.
- Cut the candied oranges into small pieces and fold them into the batter.
- Grease a 12-cup muffin tin and fill the cups with the batter.
- Bake in the pre-heated oven for 25-30 minutes.
- Serve the muffins warm or cold.
