Avocados are native fruit
to Central America. They are rich in Vitamin K, Vitamin B5, B6, Vitamin C, and
Potassium. They are also rich in Vitamin E, Niacin, and Riboflavin. Avocados
also provide the "good" fats to your bodies.
Few years ago, farmers
started to cultivate avocados in Lebanon and it turned out to be a successful
cultivation. The season of picking fresh avocados in Lebanon is
October/November. It happens to be the same season of picking citrus fruit like
red grapefruit, which is also rich in vitamins and minerals like Vitamin A,
Vitamin C, B1, potassium, biotin, and many others.
Almonds are also rich in
healthy fats, Vitamin E, potassium, magnesium, and calcium.
Therefore, as you notice,
this salad is packed with nutritious ingredients, and it is worth including it
in your diet.
People with Celiac disease
should always include healthy fruit and vegetables in their diet, especially
the ones that are rich in vitamins, minerals, and antioxidants (lycopene and
beta-carotene).
Ingredients
- 1 ripe avocado
- 1 red grapefruit
- Few lettuce leaves
- ½ cup coriander
(cilantro) leaves
- ¼ cup toasted almonds
- Juice of the pulp of the
used grapefruit (around 2 tbsp)
- 1 tbsp raspberry vinegar
(or any fruit vinegar)
- 2 tbsp olive oil
- Pinch of salt
Method
- Cut the lettuce leaves and spread in a serving plate.
- Peel the ripe avocado, remove the pit, and slice into eight segments.
- Peel the red grapefruit and slice it into the segments discarding the pith.
- Lay the slices of avocado and orange grapefruit on the lettuce. Then sprinkle the coriander leaves and the toasted almonds on top.
- Squeeze the remaining pith of the grapefruit to extract around 2 tbsp of juice.
- Put them in a bowl and add to them the vinegar, olive oil, and salt. Mix well and drizzle over the salad.
- You can top the salad with grilled chicken segments or smoked salmon as a main course.
