Usually shepherd's pie is made with
mince lamb. I used beef, and I cut it into small cubes, but you can use lamb if
you prefer. In addition, Shepherd's pie has mashed potatoes on the top. I used
soya milk and dairy-free butter in my mash, but you can use regular milk and
butter, if you are not allergic to dairy products.
Ingredients (for the mash)
- 1 kg potatoes, peeled and cut into
big chunks
- 1 tsp salt
- 1 tbsp non-dairy butter (or regular
butter)
- 1 cup soya milk (or regular milk)
- Freshly-grated nutmeg
- 1 egg yolk beaten
Method
- Put the potatoes in a saucepan and cover with water. Add the salt and put on the heat to boil for 10-15 minutes.
- When the potatoes are tender, drain and mash with a potato masher.
- Add the butter, the milk and the egg yolk to the mash.
- Add the nutmeg and more salt if needed. Mix well.
Ingredients (for the base)
- 500 g. beef cut into small cubes
- 3 tbsp vegetable oil (I use canola
oil)
- 1 onion, diced
- 1 clove of garlic, minced
- 3 carrots, cubed
- 1 small can corn (150 g.)
- 150 grams frozen peas
- 1 tbsp corn flour
- ½ cup red wine (optional)
- 1 tbsp Heinz Worcestershire sauce(gluten-free)*
- 1 tsp tomato paste
- 1 cup water
- 1 tsp salt
- Freshly-ground black pepper
- Freshly-grated nutmeg
- 1 tsp fresh rosemary
Method
- Put the oil in a pot on the stove and add the diced onion. Add ½ tsp of salt and stir well until the onion is translucent and soft.
- Add the carrots and stir for 2-3 minutes, then add the garlic.
- Add the cubed meat and stir well until the meat is cooked. Add the remaining salt, black pepper, nutmeg, and rosemary.
- Add the corn and green peas. Mix well and then add the corn flour and mix until the meat is well coated.
- Add the wine (if using), the Worcestershire sauce, tomato paste and stir well.
- Add the water and let the mix simmer for 10 minutes. Put off the heat. Transfer the meat mix to an ovenproof glass plate and use a piping bag to pipe the mashed potatoes on top of the meat mix.
- Bake the shepherd's pie in a pre-heated oven on 225°C for 20-25 minutes.
Yields: four portions
* There are some Worcestershire sauce
brands in the market that are gluten-free like Heinz, Lea and Perrins,
French's, Kroger, and others.
