Ingredients (Guacamole)
- 2 ripe avocados
- Juice of two limes
- ½ white onion finely chopped
- 1 red tomato finely diced
- ½ chili finely diced (optional)
- ½ tsp salt
- ¼ tsp cayenne pepper
- ¼ cup chopped coriander (cilantro)
Method (Guacamole)
- Peel the avocados and remove the pit.
- Put in a bowl and mash with a fork or a potato masher.
- Add the chopped onions, diced tomatoes, diced chili (if used),chopped coriander, salt, cayenne pepper, and lime juice.
- Mix all the ingredients together and put in the fridge covered for half an hour, for all the flavors to blend well.
- Serve with gluten-free tortilla chips or with cut fresh vegetables like carrots and cucumber for a lighter version.
Ingredients (Salsa)
- 2 red tomatoes finely diced
- ½ green pepper finely chopped
- ½ white onion finely chopped
- ½ chili finely diced
- ½ cup chopped coriander (cilantro)
- Salt and black pepper to taste
- 1/8tsp cumin
- Juice of one lime
Method (Salsa)
- Put all the ingredients together in a bowl and mix well.
- Keep the salsa mix in the fridge for at least 2 hours to let the flavors blend and enhance. Serve with gluten-free tortilla chips.
Ingredients (Gluten-Free Tortilla
Chips)
- 2 cups Masa Harina (corn meal and
not corn starch)
- 1 tsp salt
- 1 ½ cups hot water
Method(Gluten-Free Tortilla Chips)
- Put the corn flour and the salt in a deep bowl.
- Add the hot water and use a wooden spoon to stir all the ingredients together.
- Stir well until a soft dough is formed.
- Divide the dough into 6 portions and cover with nylon wrap.
- Put each portion between two sheets of nylon wrap and roll out using a rolling pin.
- Roll it out as thin as possible. Use a round cutter (15 cm) to cut the tortillas.
- Heat a non-stick frying pan and put the individual tortillas on medium heat to toast.
- Flip the tortilla on the other side. No need to grease the pan.
- For tortilla chips, use scissors to cut each tortilla into eight triangles.
- Deep fry in vegetable oil or spray with oil and toast in the oven for a healthier version.
- Serve your tortillas with Guacamole Dip or Tomato Salsa
TIP: If you want to buy your tortilla
chips ready-made or in bags, make sure they are 100 % gluten free.
