Gluten-Free Dairy-Free Banana Cake


Sometimes, you have some over-ripe bananas at home, and you don’t know what to do with them. So let’s make together a banana cake today. It’s nutritious, delicious, and children will love it. But what’s most important, it’s gluten and dairy free!

Ingredients

- 2 eggs
- 2 over-ripe bananas
- ¾ cup brown sugar
- ¼ cup vegetable oil (I use canola oil)
- 1-2 tbsp. soy milk or almond milk
- ½ tsp cinnamon
- 1 tsp baking soda (bicarbonate of soda)
- ¼ tsp salt
- 1 tsp vanilla essence








Method
  1. Peel the bananas and mash them using a fork.
  2. Beat the eggs for 2 minutes and add the brown sugar and vanilla.
  3. Beat for one minute.
  4. Add the mashed bananas and mix with a spatula or wooden spoon.
  5. Mix the dry ingredients together (Flour, cinnamon, and baking soda)
  6. Fold the dry ingredients into the wet ingredients and mix using spatula or wooden spoon.
  7. Add the milk gradually one spoon at a time until you get a smooth but not runny consistency.
  8. Grease a loaf tin and pour the cake mix into the tin.
  9. Bake in a pre-heated oven on 190°C for 25-30 minutes or until the inside of the cake is dry.
  10. Let the cake cool, and then turn it into a serving plate.
  11. Serve it warm or at room temperature.
