Sometimes,
you have some over-ripe bananas at home, and you don’t know what to do with
them. So let’s make together a banana cake today. It’s nutritious, delicious, and
children will love it. But what’s most important, it’s gluten and dairy free!
Ingredients

2 eggs

2 over-ripe bananas
- ¾
cup brown sugar
- ¼
cup vegetable oil (I use canola oil)
- 1-2
tbsp. soy milk or almond milk
- ½
tsp cinnamon

1 tsp baking soda (bicarbonate of soda)
- ¼
tsp salt

1 tsp vanilla essence
-
1 ¼ cups gluten-free cake flour mix
Method
- Peel the bananas and mash them using a fork.
- Beat the eggs for 2 minutes and add the brown sugar and vanilla.
- Beat for one minute.
- Add the mashed bananas and mix with a spatula or wooden spoon.
- Mix the dry ingredients together (Flour, cinnamon, and baking soda)
- Fold the dry ingredients into the wet ingredients and mix using spatula or wooden spoon.
- Add the milk gradually one spoon at a time until you get a smooth but not runny consistency.
- Grease a loaf tin and pour the cake mix into the tin.
- Bake in a pre-heated oven on 190°C for 25-30 minutes or until the inside of the cake is dry.
- Let the cake cool, and then turn it into a serving plate.
- Serve it warm or at room temperature.
