It
is not easy to make sandwiches for children with Celiac disease. In normal
cases, you can prepare a sandwich for your kid to take to school or to take as
a snack while playing. However, when a child cannot eat gluten, you are always
not sure what to prepare. I tried several recipes for sandwich bread that you
can also use as a hotdog bun. This recipe turned out to be delicious. The buns are soft from
the inside and crunchy from the outside.
Ingredients

¾ cup soy milk

1 tsp honey

1 tsp yeast

1 tsp baking powder

¾ tsp salt

2 eggs

4 tbsp. canola oil
- 1
tsp apple cider vinegar

1 cup gluten-free oat flour
- ¼
cup tapioca flour

1 tsp xanthan gum
Method
- Warm the soy milk, add the honey and yeast to it.
- Stir lightly until the honey and yeast dissolve.
- Let the yeast proof for few minutes.
- Meanwhile, mix the dry ingredients (oat flour, all purpose flour, tapioca flour, xanthan gum, baking powder, and salt)
- Mix the wet ingredients (eggs, canola oil, and vinegar) and add to the dry ingredients.
- Add the yeast mixture and mix altogether with an electric mixer for few minutes.
- Let the dough rest for 15 minutes (covered)
- Prepare a sheet pan or a hotdog bun pan (like the pics)
- Put the dough in a piping bag and cut a wide opening at the end of the bag.
- Pipe four hotdog buns on the sheet pan.
- Beat one egg and brush the tops of the buns.
- Sprinkle some sesame seeds on each bun.
- Let it rest for 45 minutes to 1 hour, then bake in a pre-heated oven on 190°C for 15-20 minutes.
- Fill the buns with hotdogs or with any filling you like.
