Madeleines
are small cakes originally from the Lorraine region in Northeast France.
Madeleines are delicious, light, and great with coffee and tea. Usually they
are served with jam. Madeleines are usually baked in oblong shaped molds (check the picture) and served warm and fresh in the morning.
I
did not have the proper pan for the madeleines so I baked them in paper cupcakes oblong shape. They tasted amazing especially with homemade strawberry jam.
Ingredients

3 eggs

½ cup sugar

75 grams butter, melted

¾ cup gluten free cake flour mix

1 tsp baking powder

Zest of one big lemon

1 tsp poppy seeds
Method
- Beat the eggs and sugar with an electric beater on high for 3-4 minutes until pale and fluffy.
- Add the melted butter slowly while beating.
- Add the zest, poppy seeds, flour, and baking powder to the egg mix.
- Mix with the electric beater on low for 30 seconds until everything is well mixed.
- Fill oblong molds or Madeleine pan with the batter and bake in a pre-heated oven on 190°C for 20 minutes.
- Serve the madeleines warm or cold with homemade strawberry jam.
