This rustic Italian salad has very
basic ingredients. Italians use stale bread to make this recipe. It is
delicious, it is filling, and it is simple. It is a whole meal by itself. I
hope you will enjoy it!
Ingredients
- Stale bread (I used pieces of bread
from my gluten-free white loaf bread)
- 4 tbsp olive oil
- 3 ripe tomatoes cut into big chunks
- 10 cherry tomatoes cut in half
- 3-4 green onions, chopped
- 4-5 leaves mint, chopped
- 4-5 leaves basil, chopped
- A handful of chopped parsley
- 1/2 green chili, diced (optional)
- 2 tbsp red grape vinegar
- Salt and black pepper
Method
- Take the bread pieces and spread them on a baking sheet. Drizzle 2 tbsp olive oil on them and toast them in a hot oven. Put aside to cool.
- Put the tomatoes, onions, parsley, mint, basil, and chili (if using) in a salad bowl. Drizzle the remaining oil on them and add the vinegar, salt, and black pepper.
- Toss the salad, then add the bread and toss again. Drizzle more oil if need be.
- Enjoy this hearty salad on its own or with grilled chicken or grilled fish.
