Gluten-Free Italian Panzanella Salad

This rustic Italian salad has very basic ingredients. Italians use stale bread to make this recipe. It is delicious, it is filling, and it is simple. It is a whole meal by itself. I hope you will enjoy it!





Ingredients

- Stale bread (I used pieces of bread from my gluten-free white loaf bread)
- 4 tbsp olive oil
- 3 ripe tomatoes cut into big chunks
- 10 cherry tomatoes cut in half
- 3-4 green onions, chopped
- 4-5 leaves mint, chopped
- 4-5 leaves basil, chopped
- A handful of chopped parsley
- 1/2 green chili, diced (optional)
- 2 tbsp red grape vinegar
- Salt and black pepper




Method
  1. Take the bread pieces and spread them on a baking sheet. Drizzle 2 tbsp olive oil on them and toast them in a hot oven. Put aside to cool.
  2. Put the tomatoes, onions, parsley, mint, basil, and chili (if using) in a salad bowl. Drizzle the remaining oil on them and add the vinegar, salt, and black pepper.
  3. Toss the salad, then add the bread and toss again. Drizzle more oil if need be.
  4. Enjoy this hearty salad on its own or with grilled chicken or grilled fish.

Yields: two portions
