These
tartlets are amazing! They are delicious, sweet, and very elegant on your
table. No one will believe that they are gluten-free. Try them and impress all
your friends!
Ingredients

250 grams butter, soft

1 ½ cups icing sugar

2 egg yolks

1 tsp vanilla
-
3 cups gluten-free all-purpose flour mix
Method
- Put the butter in the mixer, add the icing sugar, and beat on low for 2 minutes until the sugar is fully incorporated.
- Add the vanilla and egg yolks and continue beating.
- Add the flour gradually while the machine is still on.
- Once the dough crumbles, put off the machine and turn the dough onto a floured surface.
- Shape the dough, wrap it with cling film, and keep it in the fridge for 30 minutes.
- Take the dough out and roll it between two layers of nylon sheets.
- Use a flower-shape cutter to cut the dough.
- Prepare a small muffin pan. Grease it with melted butter.
- Turn each floweret into the small muffin pan.
- Pierce the bottom of each floweret with a small fork.
- Once done, put the pan in the fridge for 30 minutes.
- Meanwhile, preheat oven to 190°C.
- Bake the flowerets for 10-13 minutes, until they are golden.
- Take the muffin pan from the oven and let it rest for few minutes.
- Take the flowerets out very gently (they break easily) and let them cool on a wire rack.
- Once cold, fill the flowerets with jam of your choice.
