Ingredients

- 250 grams butter, soft
- 1 ½ cups icing sugar
- 2 egg yolks
- 1 tsp vanilla

Method
  1. Put the butter in the mixer, add the icing sugar, and beat on low for 2 minutes until the sugar is fully incorporated.
  2. Add the vanilla and egg yolks and continue beating.
  3. Add the flour gradually while the machine is still on.
  4. Once the dough crumbles, put off the machine and turn the dough onto a floured surface.
  5. Shape the dough, wrap it with cling film, and keep it in the fridge for 30 minutes.
  6. Take the dough out and roll it between two layers of nylon sheets.
  7. Use a flower-shape cutter to cut the dough.
  8. Prepare a small muffin pan. Grease it with melted butter.
  9. Turn each floweret into the small muffin pan.
  10. Pierce the bottom of each floweret with a small fork.
  11. Once done, put the pan in the fridge for 30 minutes.
  12. Meanwhile, preheat oven to 190°C.
  13. Bake the flowerets for 10-13 minutes, until they are golden.
  14. Take the muffin pan from the oven and let it rest for few minutes.
  15. Take the flowerets out very gently (they break easily) and let them cool on a wire rack.
  16. Once cold, fill the flowerets with jam of your choice.
