Ingredients
- 2 cups All-purpose gluten-free flour mix
- 1 tsp salt
- 1 tsp sugar
- ½ tsp cream of tartar
- 1 ½ tsp yeast
- 1 cup warm water
- 1 tsp grape or apple
vinegar
- 5 tbsp. olive oil or
canola oil
Method
- Mix the warm water with the sugar and yeast in a bowl, and let it rise (2 minutes).
- Mix the dry ingredients (flour, salt, cream of tartar) together.
- Add the oil and vinegar to the flour mix and rub with your hands.
- Then add the yeast mix.
- You can either mix it by hand or use an electric stand mixer with the dough handle.
- Rub a bowl with one tsp olive oil and put the dough in the bowl.
- Cover it with cling film and let it rest for one hour or until the dough is well risen.
- Take one portion of the dough and roll out using a rolling pin between two layers of nylon sheets.
- Pick up the dough gently, put it in an already heated non-stick pan, and keep it on the stove until the bottom is golden.
- Flip the pastry and spread the topping on the dough.
- It could be zaatar mixed with olive oil for man'ouche or homemade tomato sauce for pizza.
- If you are making pizza, add the topping that you like over the tomato sauce (ham, turkey, mushroom, olives, green pepper...) and top with grated cheese (if you can eat dairy).
- You can use mozzarella or Swiss cheese.
- Heat the grill in your oven and put the pizza in for 2 minutes or until the cheese melts and bubbles.
Yields: 8 portions
