Gluten-Free/ Dairy-Free Man'ouche or Pizza Crust

Ingredients

- 1 tsp salt
- 1 tsp sugar
- ½ tsp cream of tartar
- 1 ½ tsp yeast
- 1 cup warm water
- 1 tsp grape or apple vinegar
- 5 tbsp. olive oil or canola oil



Method
  1. Mix the warm water with the sugar and yeast in a bowl, and let it rise (2 minutes).
  2. Mix the dry ingredients (flour, salt, cream of tartar) together.
  3. Add the oil and vinegar to the flour mix and rub with your hands.
  4. Then add the yeast mix.
  5. You can either mix it by hand or use an electric stand mixer with the dough handle.
  6. Rub a bowl with one tsp olive oil and put the dough in the bowl.
  7. Cover it with cling film and let it rest for one hour or until the dough is well risen.
  8. Take one portion of the dough and roll out using a rolling pin between two layers of nylon sheets.
  9. Pick up the dough gently, put it in an already heated non-stick pan, and keep it on the stove until the bottom is golden.
  10. Flip the pastry and spread the topping on the dough.
  11. It could be zaatar mixed with olive oil for man'ouche or homemade tomato sauce for pizza.
  12. If you are making pizza, add the topping that you like over the tomato sauce (ham, turkey, mushroom, olives, green pepper...) and top with grated cheese (if you can eat dairy).
  13. You can use mozzarella or Swiss cheese.
  14. Heat the grill in your oven and put the pizza in for 2 minutes or until the cheese melts and bubbles.
